Freezing is one of the most effective preservation methods in the food industry, but not all freezing technologies are the same. Choosing the right system can significantly impact product quality, production efficiency, operating costs, and customer satisfaction.
Among the most commonly used technologies are Individual Quick Freezing (IQF), Blast Freezing, and Spiral Freezing. Each has its own strengths and is best suited for specific products and production requirements.
The primary objective of freezing is to reduce product temperature rapidly enough to preserve texture, flavour, colour, nutritional value, and shelf life. However, the freezing method determines how effectively this objective is achieved.
IQF freezes individual pieces separately using high-velocity cold air. Since each item freezes independently, products remain free-flowing without sticking together.
Blast freezing uses high-speed cold air inside a freezing room or cabinet to remove heat quickly from products.
Spiral freezers transport products on a continuous spiral conveyor through a controlled freezing chamber.
